OUR VINEYARD ON THE HILL OF PALIOKALIAS
UNFOLDS LIKE A NATURAL AMPHITHEATRE.
THE LIGHT, THE SOIL, AND THE BREEZE
COME TOGETHER SILENTLY IN EVERY HARVEST.
FROM SOIL TO VIVE
TERROIR
On the northeastern slope of Mount Vermio lies the area of Palaiokalias, where the winery’s vineyard stretches out at an altitude of 200–250 meters. The soil is clay-loam, and the microclimate of the area allows for excellent drainage, while most of the vineyard is on a slope. Throughout the vineyard, yields are kept low — around 800 kilograms per stremma (0.1 hectares). The cultivation follows a sustainable farming approach, avoiding the use of herbicides and pesticides. All vineyard work is done by hand, with a strong focus on protecting both biodiversity and the surrounding ecosystem.
XINOMAVRO & PREKNADI
PREKNADI
Preknadi, also known locally in Naoussa as "Prekniariko," is one of the rarest and least known Greek white grape varieties. Its name derives from the distinctive brown spots or freckles that appear on the grape berries as they ripen — spots that are called "preknes" in Naoussa and certain areas of Northern Greece.
This variety is cultivated mainly in Macedonia, with its heart in the region of Naoussa. Despite its limited spread, the Preknadi grape has managed to survive thanks to the dedication of a few winemakers who recognize its value and potential. Single-varietal wines from Preknadi are produced by only a handful of wineries in Naoussa, making each bottle truly unique.ή.
Its vinification presents certain challenges, as it is a variety that is quite prone to oxidation. Proper temperature control and the use of modern storage techniques help preserve its quality and prevent premature oxidation.
Wines made from the Preknadi variety are distinguished by their unique aromatic profile. On the nose, they reveal notes of citrus and white-fleshed fruits, while on the palate they are vibrant, with a fresh character and balanced acidity.
XINOMAVRO
Hidden in the embrace of Mount Vermio lie the vineyards of Naoussa, where for hundreds of years a gifted red grape variety has been cultivated. Our folk songs confirm this: "They carry wine like Naoussa’s in their scarves." The fruit of this grape was so precious that women would carry it in their scarves to protect it from being damaged.
This, then, is Mavro Naousas. Popolka, Popoliko, Mavro Xino, or commonly Xinomavro are some of the names this variety has been called over time, giving us the wines of the Protected Designation of Origin NAOUSSA.
It is characterized by its high acidity (“Xino” meaning sour) and deep dark color (“Mavro” meaning black), while its distinctive aromas combine fruity and herbal notes such as tomato, olive, and blackberry. It will often remind you of Nebbiolo’s Barolos, and sometimes even Burgundy’s Pinot Noirs. Despite any similarities, it is a unique Greek variety overall, which, due to its challenging character, has rightfully earned the title: the diva of the North.
The grape is unruly in the vineyard, requiring special care in cultivation, suitable weather conditions, and low yield per hectare to reveal the richness of its character. It is then that we get wines with perfect balance between sugars, acids, and tannins.
